Hold Start after selecting a song at the music selection screen.
Guitar Freaks: Extreme difficulty
Hold Green and press Pick2 at the music selection screen.
Toggle Bass and Open Pick guitar modes:
Press Pick, Green2, Pick at the music selection screen.
